I'm originally from Newfoundland, but have been living in Halifax Nova Scotia for the last 7 years. I love to travel, just recently got married and now I'm enjoying every moment of life with my family.. Chris, Cocoa and me!!
Here is a spice blend I used the other night for Chicken, a louisiana inspired recipe it's a creole seasoning that can be used for blackened chicken (Emeril Lagasse's Recipe). I took a whole chicken and removed the backbone and flatened the chicken out. I took the spice blend and rubbed the chicken with it, layed it skin side down in a hot cast iron skillet and cooked it until nice and black, flipped it over and finished it off in a 400 degree oven. Cooked it for about 35 min or until the thermometer was about 170 degrees. Let it rest for 10 min and then served with Rice and a Salad. Very yummy. Would also be good for BBQ as well.
So Monday night Chris and I went to Pete's Froutique in search of some strawberries for waffles today, since both of us were off. We bought a ton of fruit and also bought a "Dragon Fruit" to try... it was pretty yummy. It tastes like a kiwi but without that tarty kiwi taste.. it was pretty tasty and looks pretty cool too. Give it a try!!!!

Hope everyone has a good Valentines Day... I already got my present from Chris this morning he had blown up 3 pictures from our trip to California, vegas and the grand canyon and framed them in black and white frames. I've been talking about it for a while and he did it for me.... he's such a sweet guy. I'm gonna hang them over my bed .. I think it will look really nice. Anyway, Have a good Valentines.
